Thai Beef Salad
- 1 tablespoon raw rice
- 1 pound sliced beef or chicken breast
- 1 teaspoon oil (optional)
- 1/2 bunch cilantro, roughly chopped
- 2 tablespoons chopped lemon grass (or lemon zest in a pinch)
- 4 green onions, sliced
- 4 cloves garlic, chopped
- 3 tablespoon lime juice
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon sugar
- 3 tablespoons fish sauce
Toast raw rice in a stainless steel pan until golden. Grind with mortar and pestle.
Set aside.
Sauté meat with oil, drain and cool (the salad is served at room temperature).
Stir all ingredients in pan. Serve with rice, preferably jasmine. This recipe can be prepared with chicken instead of beef. Beef tends to be tastier.
